“Inspired by Italy’s culinary traditions, guests will be treated to myriad flavours and a gourmet experience,” explains Chef Dalton Fong. “I hope that through the mindfully sourced produce combined with our ideas from our recent culinary pilgrimage, guests will gain a better understanding of my thoughts and the reinterpretation behind my cuisine.”
